One of the best meals I ever had was at Restaurant Leo in Bogota, Colombia.
This meal was so life-changing, it’s made it into most of my keynotes on the Future Food Revolution as a prime example of how gastronomy can be used as a vehicle for change.
Therefore, it is my distinct honor to welcome Laura Hernández Espinosa as my guest today. She is half of the mother-daughter team behind Leo, which offers a sensory and liquid journey through one of the most multicultural and biodiverse countries in the world.
The ingredients Leo uses explores how gastronomy can be used as a platform for regional and social development increasing biodiversity, telling stories, and strengthening ties between rural and urban areas. It’s no wonder they’ve been named on the World’s 50 Best restaurants many times over.
